There are two methods of processing chicken, the one most commonly use is water chilling where thousands of chickens are placed in a communal bath of ice cold chlorinated water, where they can absorb up to 23% water, and are exposed to cross contamination and potentially bacteria like salmonella.
Air-chilling is a process where chickens are cooled in controlled temperature coolers using purified air, eliminating additional water weight and significantly reducing the risks of disease.
